Savoury flavour with top notes of white pepper & coriander. Use 40-50g of spice per kg of meat. Mix/tumble spice, meat & any additional ingredients together. Leave overnight to marinate. Mix/tumble again & hang. Then dry to 40-60% moisture loss.
